Saffron Malai Tikka is one of the jewels of Mughlai cuisine, and at Kirat Dhaba we prepare it with the care and attention this royal dish deserves. The chicken is marinated in a rich paste of cream cheese (malai), fresh ginger, garlic, green chillies, and the star ingredient — saffron (kesar) — which lends its distinctive golden colour and delicate aroma.
After marinating for hours, the chicken pieces are threaded onto skewers and cooked in our authentic clay tandoor at intense heat. The result is chicken that’s incredibly tender and juicy on the inside, with a light char on the outside. The saffron and cream cheese create a mild, subtly sweet flavour profile that’s unlike any other tikka — making it a favourite among those who prefer milder spice levels.
