Biryani is the crown jewel of Indian rice dishes, and at Kirat Dhaba we treat it with the reverence it deserves. Our preparation begins with premium basmati rice, soaked and par-boiled with whole spices. Separately, the meat is marinated in a blend of yogurt, ginger-garlic paste, and biryani masala, then partially cooked to absorb all the flavours.
The magic happens in the layering and slow-cooking (dum) process. Rice and meat are carefully layered in a heavy-bottomed pot, topped with saffron-infused milk, fried onions, fresh mint, and coriander leaves, then sealed and cooked on low heat. This dum method allows the flavours to meld beautifully, creating rice that’s fragrant, fluffy, and infused with the essence of the spiced meat.
